Howdy Partner! This hearty 24oz Cowboy cut is hand cut from the rib section and aged to perfection, offering tenderness and the enhanced richness that comes from leaving the bone intact. This beefy cut is great for grilling, broiling, or pan grilling. The Ribeye gets such high praise because it’s the most well-marbled of all the steaks and tender to boot. We handcraft this steak to showcase the brilliantly marbled center, including a nice Rib Eye Cap on one end which is loaded with delicious flavor.
The 18oz Cowgirl steak is just a more tailored version of this bone in Ribeye, as the spinalis (the top cap) is trimmed off. Both steaks have a French-trimmed bone- making for the ultimate presentation.
