Sometimes referred to as a California cut, or Santa Maria steak, since this California town made the tri-tip roast famous at its annual barbecue festival. The tri-tip steak is cut from the triangular bottom sirloin, making it an economical piece of meat that is loaded with flavor. (Can equal the flavor of a Rib Eye for a fraction of the cost!)
The tri-tip has excellent marbling and is very tender as long as you don't overcook it. Tri-tip is best suited for grilling, but it can certainly be cooked on the stovetop in a hot skillet. We have not cooked yet . We have cooked many both on grill and oven. We marinade it in garlic soy sauce onion and Italian dressing with adding some herbs
